Green Tea Noodles with Coconut Chicken, Silken Tofu & Edamame
This is the ultimate in weeknight simplicity that looks restaurant quality. Clean ingredients, high protein, can be cooked in 15 minutes; this one ticks all the boxes and packs a flavour punch you’re going to love.

Ingredients
2 x chicken breasts (approx. 600g)
250ml or 1 cup of coconut milk
250ml of (filtered) water
1 piece of ginger, approx 5cm (finely sliced)
1 tbsp lime juice
1 x 300g pack of silken tofu
1 cup of Edamame (shelled)
2 cups spinach / rocket (finely chopped)
200g green tea noodles*
1 medium Lebanese cucumber
Chilli oil:
1 tbsp olive oil
1 tbsp tamari / gluten free soy
1/2 tsp sesame oil
1 heaped tsp red curry paste
1 tbsp sesame seeds
Method
Add the top 5 ingredients to a small saucepan and place over a low-medium heat to bring to a simmer. You want to use a small saucepan so that the coconut milk and water covers or almost covers the chicken breasts.
Once the saucepan is simmering, reduce heat to low and turn chicken breasts over in the milk mixture. Continue turning every 1-2 mins and cook for 10-15 mins (this will depend on how thick your chicken breasts are; thicker will take closer to 15 mins)
While the chicken is cooking, prepare your spinach / rocket and Lebanese cucumber and set aside.
Place edamame and green tea noodles into boiling water (together) and cook for 3-4 mins. Remove from heat, rinse and drain well. Once cooled, remove edamame from pods.
Once the chicken is cooked, remove from saucepan and allow to rest for 5-10 minutes.
Combine all sauce ingredients in a saucepan and heat slowly. Once heated, transfer to a heatproof vessel to cool
Remove silken tofu from pack and place onto a plate, then pour chilli oil over.
To assemble, place noodle into individual bowl with greens, chicken, cucumber and tofu on top. Finish with edamame.
